Independence Brewing Company is a legendary name in craft beers and Balewadi was blessed with their own branch a few months ago. A different menu, a different buzz but the same quality and vibe! The space is utterly beautiful and classy. They have now made a few thrilling additions to the menu and it is thoroughly amazing. I was invited by Husein for a food tasting along with Food Prowl and I had an amazing time.

I mean I couldn’t not have a few of their amazing crafts, right? I had their light classic highly sessionable Pilsner and one of my favourite lighter beers in town – the Four Grain Saison. I’m a massive fan of this bright, crisp, fragrant and citrusy stuff! Then the crown jewel, the new – Nitro Porter! Dark, chocolatey, intense, coffee and creamy wonderland.
I also tasted their new Passion Pie – citrusy, mildly sour and aromatic passion fruit flavour. The Moonshine Meadery’s Guava Chilli Mead was super too! Sweet, light, loads of guava flavour and a hint of chilli.
Garlic Chilli Fry
Think something’s missing? Hell no, you read it right! Whole garlic cloves fried in red and green chillies, and light spices. Mind blowing stuff. Chakna from the Gods! Popping couple of these between chugs and bites, it blows up like a flavour bomb inside your mouth! It’s a must have!
Tenderloin and Smoked Chilli Fry
Soft juicy buff (buffalo meat) stir fried and caramelized to perfection with smoked red chilli, curry leaves, spices and chunky peanuts! Kerala, I’m hopping on a plane and coming to you! Oh wait, I have IBC, Balewadi now, I don’t need you! Smoky, juicy, spicy perfection!
Thecha Paneer Skewer
Beautiful soft and springy paneer coated with the most delicious spicy, garlicy, green thecha and grilled to absolute perfection. One of the best paneer kababs I’ve had for sure!
Green Sukha Mutton
Another stellar dish. Juicy, succulent mutton cubes fried in a very Maharashtrian green chilli, corriander, onion and garlic-ginger masala. Moderately spicy and just so juicy and flavourful. Utterly magnificient. Served with buttered toast. Different but amazing combination.
Smoked Mutton Samosa
The best mutton samosa you can have in Pune, I can bet! It’s just delicious. Meaty, crispy, juicy heaven. I would have this over anything else you can offer me. No doubt. Probably I would demand this as my last meal!
Deviled Eggs with Truffle Oil Drizzle
Complete U-turn from the bold desi flavours, but so good! Perfectly boiled eggs with creamy, herby, mustardy yolk! It is an unexpected masterclass, this seemingly simple dish. Absolutely soul satisfying.
Prawns and Mash
This was a bit of a mixed bag. Though the prawns and the lovely salsa were delicious, the mash and the overall combination didn’t seem to work. Just the prawns and salsa with bread on the side may have worked. But this dish definitely needs some rethinking. Chef graciously accepted the feedback.
Roasted Mushrooms Pizza
Crispy smoky thin base with a truckload of oyster and button mushrooms with oodles of cheese!! Heavenly pizza. Puts a smile on your face!
Another respite from the heavy – spice laden dishes. Amazing al dente spaghetti, delicious tangy and herby tomato sauce with juicy lamb meatballs. Really delicious rustic pasta. Loved it!
Smoked Pulled Pork Tacos
Soft shell tacos filled with amazing pork, onions and pineapple. But the filling was a tad dry. Overall the taste was good, but the pork needed to be juicier or it needed a some sauce.
Buttermilk Fried Chicken Burger
Chunky crispy chicken in a huge toasted bun with coleslaw. Pretty good taste wise, but again felt a touch dry. May be just adding sauce between the fried chicken pieces too could fix that.
Mutton Kheema Masala
Delicious kheema fry with loads of peas. Squeeze loads of lime and you’re good to go. Really classic amazing flavours. I personally didn’t like so many peas in there, especially when they’re not melting into the kheema, but it’s just a personal preference, may be.
All the desserts literally vanished from existence the moment they touched the table. I have no idea what sort of sorcery was going on!
Coconut Panna Cotta
A delicious wobbly luscious creamy panna cotta with tangy pineapples and a mind blowing coconut milk, lemongrass, kafir lime and red chilli sauce!! Whoever came up with this, I want to go give them a tight hug, but my three hundredth plate of the panna cotta might come in the way. Oh well!
Oh God! Velvety dark chocolate orgas-m-ousse (is that a word? It is now!) Flanked by a hard almond praline, lying in chocolate soil and pistachio crumble! You just want to put it in your mou…. (Sorry, where am I? What’s happening here?)
Luscious creamy custard doused in a delicious caramel sauce, topped with black currants and pistachio crumble! So good! The combination of flavours and textures was just amazing!
Dark Ale Cake
Really nice chocolate cake infused with dark ale and a dark chocolate icing. It was really good, but without the icing or sauce, the cake itself felt a bit dry. Had it been more moist and gooey, it definitely would have made it so much better!
You should definitely pair these desserts with the Nitro Porter! It just completes the experience. The combination of all the chocolatey / caramelly desserts and the porter is just amazing!
Well, IBC, is always a must visit place with exceptional quality, amazing food and of course some crazy brews. This new menu at the Balewadi branch is just superb, though a few dishes do need a bit of tweaking, They’re open to feedback and are committed to great service. The food and craft beers are a must try and if you haven’t tried them before, I assure you, you’ll have a great time. Cheers!
